A wonderful appetizer that offers the fresh taste of a summer garden in every bite!

Tomato Basil Crostini

3 ripe tomatoes, chopped
6 fresh basil leaves, thinly sliced
2 tablespoons freshly shredded Parmesan cheese
4 tablespoons extra virgin olive oil
1 French baguette cut into 32 (1/4 inch) slices
1 head of garlic, roasted (optional)
  1. Preheat the oven to 400°F (205°C).
  2. Cut French baguette in 1/3 inch slices and place on a baking sheet and drizzle the bread with Bertolli Extra Virgin Olive Oil and season with salt. For extra flavor, rub the slices with roasted garlic.
  3. Toast for about 15 minutes or until golden in the oven.
  4. Chop tomatoes and slice basil leaves.
  5. Layer each piece of toast with tomato, basil and shredded Parmesan cheese drizzle with more Bertolli Extra Virgin Olive Oil and serve immediately.

Makes 6 to 8 servings.
