Zesty Vegetable Egg Spread
Serve this colorful veggie-laden egg spread with your favorite crackers, or as a dip for fresh vegetable crudités.
Recipe Ingredients:
1 cup reduced-fat or regular ranch dressing4 ounces low-fat or regular cream cheese, softened
2 tablespoons lemon juice
4 hard-boiled eggs, chopped
2 tablespoons shredded carrots
2 tablespoons green onions (with tops), chopped
2 tablespoons mushrooms, finely chopped
2 tablespoons radishes, finely chopped
Cooking Directions:
- In medium bowl, stir together dressing, cheese and juice until smooth and creamy.
- Stir in remaining ingredients. Cover. Refrigerate to blend flavors.
- Serve as a spread with crackers or as a dip for fresh vegetables.
Makes 2 cups spread.
