Carrot Bars

1 (15-ounce) can diced carrots
2 cups granulated sugar
1 1/4 cup vegetable oil
4 large eggs
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1 1/2 teaspoon ground cinnamon
1/2 cup chopped nuts
Sour Cream Icing (recipe follows)
  1. Blend carrots in blender. Combine with sugar,oil and eggs in large mixing bowl.
  2. Combine together flour, salt, soda and cinnamon – add this to carrot mixture, mix well. Stir in nuts.
  3. Place in greased 11 x 18-inch pan.
  4. Bake at 350 degree F. for 30 minutes.
  5. Cool and frost with Sour Cream Icing.

Makes 6 servings.

Sour Cream Icing:

4 tablespoons butter OR margarine, softened
1 teaspoon vanilla extract
1/2 cup light sour cream
3 cups powdered sugar
  1. Blend together butter, sour cream and vanilla. Add powdered sugar and beat until smooth.
