Honey-Oatmeal Date Bars
- 3 cups dates, pitted and chopped
1 1/4 cups water
3/4 cup butter
1/2 cup honey
1 3/4 cups all-purpose flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking powder
- Preheat oven to 350°F. Grease and flour an 8-inch square baking pan; set aside.
- Heat dates and water over low heat in a small saucepan, stirring until smooth and thick; set aside to cool.
- In a medium mixing bowl, cream together butter and honey. Add flour, oats and baking powder; mix thoroughly. Flatten half into pan.
- Spread the date mix over this and top with the remaining oat mixture. Bake for 30 minutes. Cool before cutting into bars.
Makes 24 bars.
