Cheesy Ro-Tel Chili Brisket Tacos
- 1 fully-cooked brisket, shredded and chopped
- 1 (10-ounce) can RoTel brand tomatoes with chilies
- 1 (16-ounce) can chili con carne, with or without beans
- Shredded cheddar cheese as accompaniment
- 1 (12-count) package of corn tortillas
- Vegetable oil for frying
- In a skillet, add shredded brisket and heat on medium heat; add one can of Ro-Tel and stir all together. Stir in one can of chili and stir and heat. in a small amount of oil fry the tortillas to be used as tacos.
- To serve spoon the meat mixture into the taco shell and sprinkle with the shredded cheese.
