Orange-Pepper Beef Steaks
- 4 beef tenderloin steaks, cut 1-inch thick (about 1 pound)
1/2 cup orange marmalade
4 teaspoons cider vinegar
1/2 teaspoon ground ginger
2 teaspoons coarse grind black pepper
- Combine marmalade, vinegar and ginger in small bowl. Press pepper onto beef steaks.
- Place steaks on rack in broiler pan so surface of beef is 2 to 3-inches from heat. Brush tops of steaks with marmalade mixture. Broil 13 to 16 minutes for medium rare to medium doneness, turning once and brushing with remaining marmalade mixture.
