Spicy Apple Pot Roast
- 2 cups Apple Flavor LIBBY'S® JUICY JUICE® 100% Juice
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground pepper
1 (5 pound) chuck roast
1/4 cup all-purpose flour
3 tablespoons all-purpose flour
- Combine apple juice, salt, cinnamon, ginger, cloves, and pepper. Add chuck roast, turning to coat. Cover and marinate overnight in the refrigerator.
- Remove the roast, reserving the marinade. Dredge the roast in 1/4 cup flour, then brown on all sides in a large kettle. Add the reserved marinade and bring to a boil. Cover, reduce the heat to low and simmer for 2 1/2 hours, or until the roast is tender.
- Remove the roast to a serving platter, reserving the pan drippings. Combine 3 tablespoons flour and 1/2 cup of the drippings; stir until smooth. Pour the flour mixture into the remaining drippings and cook, stirring constantly, until thick and bubbly.
