Spicy Apple Pot Roast

2 cups Apple Flavor LIBBY'S® JUICY JUICE® 100% Juice
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground pepper
1 (5 pound) chuck roast
1/4 cup all-purpose flour
3 tablespoons all-purpose flour
  1. Combine apple juice, salt, cinnamon, ginger, cloves, and pepper. Add chuck roast, turning to coat. Cover and marinate overnight in the refrigerator.
  2. Remove the roast, reserving the marinade. Dredge the roast in 1/4 cup flour, then brown on all sides in a large kettle. Add the reserved marinade and bring to a boil. Cover, reduce the heat to low and simmer for 2 1/2 hours, or until the roast is tender.
  3. Remove the roast to a serving platter, reserving the pan drippings. Combine 3 tablespoons flour and 1/2 cup of the drippings; stir until smooth. Pour the flour mixture into the remaining drippings and cook, stirring constantly, until thick and bubbly.

Makes 10 servings.
