Spiced Tea

4 cups water
1 (3-inch) cinnamon stick
1-inch piece of fresh ginger, cut into 4 slices
1/2 teaspoon cardamom
10 black peppercorns
1/2 teaspoon cloves
1 teaspoon coriander
4 tea bags of black tea
1 cup milk
Honey or other sweetener to taste
  1. Bring water and spices to boil in a saucepan. Reduce the heat, cover, simmer for 20 minutes.
  2. Add tea bags and milk and simmer additional 5 minutes. Do not boil once milk is added.
  3. Remove the tea bags and strain the tea into a warmed serving container. Sweeten to taste. The tea gets stronger the longer it sits, so if a stronger spice is desired, let it sit for a while and reheat.

Makes 4 servings.
