Applesauce Loaf
Whole wheat flour, applesauce, raisins and spices make for a great-tasting, good-for-you moist loaf.
Recipe Ingredients:
Olive oil cooking spray
1/2 cup light olive oil
1 cup firmly packed brown sugar
1 large egg
1 cup unsweetened applesauce
1 1/2 cups whole-wheat flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon allspice
1 cup raisins
Cooking Directions:
- Preheat oven to 350°F (175°C). Spray a 5x9 inch loaf pan with cooking spray and dust with flour.
- Beat together light olive oil, sugar and egg; add applesauce. Add the dry ingredients and raisins, stirring until just combined. Pour into prepared loaf pan.
- Bake 35 to 40 minutes, or until tested done when a wooden pick is inserted in the center and comes out clean.
Makes 12 servings.
