Applesauce Muffins
- 1 cup (2 sticks) butter, softened
2 cups granulated sugar
2 large eggs
2 cups applesauce
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground allspice
1 cup nuts, chopped
1/2 cup raisins
1 package cupcake wrappers
- Cream softened butter and sugar in a bowl until light and fluffy. Add eggs, applesauce, and vanilla; mix well. Set aside.
- Sift together flour, baking soda, cinnamon, cloves, and allspice; beat into applesauce mixture. Stir in chopped nuts and raisins until completely mixed. Spoon into muffin tins lined with cupcake wrappers.
- Bake in a 350*F oven for 10 minutes, or until brown. Remove from oven. Cool on wire racks.
Makes 2 dozen muffins.
