Basic Muffins
Using this basic muffin recipe, you can easily change up the muffin's flavor with a 1/2 cup of add-ins such as raisins, cranberries, cherries, coconut, nuts and chocolate chips. Be creative, mix and match your favorite add-ins.
Recipe Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons granulated sugar
1 teaspoon salt
1 large egg
1 cup milk
1/2 cup vegetable oil
Cooking Directions:
- Sift together flour, baking powder, sugar, and salt into a bowl. Set aside.
- In a small bowl, combine together egg, milk and oil, using a wire whisk. Add egg mixture at once to the dry ingredients. Stirring mixture only until the dry ingredients are moistened. The batter will be lumpy.
- Spoon into prepared muffin tins, filling each cup half to two-thirds full.
- Bake in a preheated 400°F (220°C) oven for 15 to 20 minutes, or until golden brown. Remove from oven. Let cool completely on wire rack.
Makes 1 dozen muffins.
