Chocolate-Date Nut Bread
- 1 (1/4-ounce) package active dry yeast or 2 1/2 teaspoons active dry yeast
1 cup Apple Flavor LIBBY'S® JUICY JUICE® 100% Juice
4 tablespoons water
2 1/4 cups all-purpose or bread flour
3/4 cup whole wheat flour
1/3 cup NESTLÉ® CARNATION® Nonfat Dry Milk
1 tablespoon NESTLÉ® TOLL HOUSE® Baking Cocoa
2 tablespoons granulated sugar
2 tablespoons wheat germ
1 teaspoon salt
1/2 teaspoon TASTER'S CHOICE® 100% Pure Instant Coffee
1/8 teaspoon baking soda
1/2 cup pecans, chopped
1 large egg
2 tablespoons vegetable oil
1 teaspoon honey
2/3 cup dates, chopped
1/3 cup NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels
- Dissolve yeast in apple juice and water; set aside.
- In a bowl, combine flour, whole wheat flour, powdered milk, unsweetened baking cocoa, sugar, wheat germ, salt, instant coffee powder, baking soda, chopped pecans, egg, oil, and honey. Add the yeast mixture and knead until smooth and satiny, about 10 minutes. Knead in chopped dates and chocolate chips. Allow to rise, covered, in a warm place for 2 hours.
- Punch down; place in a greased loaf pan, and allow to rise until doubled in bulk, about 1 hour.
- Bake at 350 degrees for 20 to 30 minutes, or until golden brown.
