Old German Muffins

3/4 cup butter, softened
1/2 cup granulated sugar
2 large eggs
1 tablespoon rum
1 teaspoon vanilla extract
3 tablespoons milk
1/2 teaspoon ground cinnamon
2 teaspoons baking powder
2 1/4 cups all-purpose flour
1/4 cup almonds, ground
1 tablespoon grated orange peel
1/4 cup raisins
  1. In a large bowl beat together butter with sugar until creamed. Using a wire whisk; stir in eggs, rum, vanilla, and milk. Set aside.
  2. In another bowl, mix together cinnamon, baking powder, and flour. Fold into butter mixture until blended-well. Gently mix in ground almonds, grated orange peel, and raisins. Pour batter into greased muffin tins, filling one-half full.
  3. Bake in a 375*F oven for 25 to 30 minutes, or until browned. Remove from oven. Let completely cool on wire rack.

Makes 1 dozen muffins.
