Raisin Bran Muffins
Start off the morning with one of these tasty, fiber-rich raisin bran muffins.
Recipe Ingredients:
1 cup bran
3/4 cup milk
1 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1/2 cup chopped raisins
1/2 cup chopped walnuts
1 large egg
1/4 cup vegetable oil
Cooking Directions:
- In a large bowl sift together flour, baking powder, salt, and sugar. Add in chopped raisins and chopped walnuts. Set aside.
- In another bowl add bran with milk, let soak for 5 minutes.
Add egg and oil to bran mixture; beat well. Pour into flour mixture; gently stirring only until the dry ingredients are moistened. The batter will be lumpy. Spoon batter into muffin tins, filling each cup 2/3 full. - Bake in a preheated 375°F (190°C) oven about 30 minutes, or until browned. Remove from oven. Let cool on wire rack.
Makes 12 muffins.
