These spiced applesauce muffins are great for breakfast or Sunday brunch.

Spiced Applesauce Muffins

1 cup butter or margarine, softened
2 cups granulated sugar
1 teaspoon vanilla extract
2 large eggs
4 cups all-purpose flour
3 teaspoons ground cinnamon
2 teaspoons baking soda
2 teaspoons ground allspice
1 teaspoon ground cloves
1 (16-ounce) can applesauce
3 tablespoons powdered sugar
  1. In a bowl, cream together softened butter, sugar, vanilla, and eggs.
  2. In another bowl, sift together flour, cinnamon, baking soda, allspice, and cloves. Combine with the egg mixture and mix well.
  3. Add applesauce and stir until just blended. Spoon into two 12 cup greased muffin tins and bake at 350*F for 15 to 20 minutes. Sprinkle with powdered sugar.

Makes 2 dozen muffins.
