These spiced applesauce muffins are great for breakfast or Sunday brunch.
Spiced Applesauce Muffins
- 1 cup butter or margarine, softened
2 cups granulated sugar
1 teaspoon vanilla extract
2 large eggs
4 cups all-purpose flour
3 teaspoons ground cinnamon
2 teaspoons baking soda
2 teaspoons ground allspice
1 teaspoon ground cloves
1 (16-ounce) can applesauce
3 tablespoons powdered sugar
- In a bowl, cream together softened butter, sugar, vanilla, and eggs.
- In another bowl, sift together flour, cinnamon, baking soda, allspice, and cloves. Combine with the egg mixture and mix well.
- Add applesauce and stir until just blended. Spoon into two 12 cup greased muffin tins and bake at 350*F for 15 to 20 minutes. Sprinkle with powdered sugar.
Makes 2 dozen muffins.
