Banana Nut Pancakes (Gluten Free)

1 1/2 cups rice flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon xanthan gum
1 1/4 cups water
3 tablespoons vegetable oil
2 tablespoons honey
2 large egg yolks, beaten
2 large bananas, mashed
1/2 cup chopped walnuts
2 large egg whites
Vegetable oil for frying
  1. Combine flour, baking powder, salt and xanthan gum in medium bowl. Stir in water, oil, honey, egg yolks, banana and nuts.
  2. Beat egg whites in medium bowl until stiff peaks form. Fold into batter.
  3. Pour batter onto hot oiled griddle or skillet; cook on both sides until golden brown.

Makes about 16 (4-inch) pancakes.
