Banana Sour Cream Waffles
- 1 cup all-purpose flour
1/2 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 large egg yolk, beaten
1 cup sour cream
1/4 cup milk
1/4 cup butter, melted
1 medium banana, mashed
1 large egg white, whipped
2 tablespoons vegetable oil
- Sift together flour, sugar, baking powder, soda, and salt; set aside.
- Mix together beaten egg yolk, sour cream, milk, melted butter, and mashed banana. Add to the flour mixture, mixing well. Fold in stiffly whipped egg white, and pour into a well-greased waffle iron. Cook until brown.
Makes 4 servings.
