Cinnamon Applesauce Coffeecake

Coffeecake:
1 cup butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup applesauce
2 1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans

Easy Glaze:
3/4 cup powdered sugar
2 teaspoons butter, melted
1/4 teaspoon vanilla extract
1 to 2 tablespoons milk
  1. Heat oven to 350°F (175°C). Lightly grease 13 x 9 x 2-inch baking pan.
  2. In a large bowl, beat butter and sugar on medium speed of mixer until well blended. Beat in eggs and vanilla. Mix in applesauce.
  3. Combine flour, cinnamon, baking soda and salt; gradually add to butter mixture, beating until well blended. Stir in pecans, if desired.
  4. Spread into prepared pan.
  5. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.
  6. For Glaze: Stir together all ingredients, adding enough milk for desired consistency. Drizzle coffeecake with glaze. Serve warm.

Makes 12 to 15 servings.
