Try this instead of oatmeal for a satisfying
hot morning meal. Swirl in some applesauce, or sweeten it with
honey or maple syrup, if you prefer. (A microwave recipe.)
Cornmeal
Mush
- 1 cup cornmeal
3 cups boiling water
1/4 cup firmly packed brown sugar
1/4 cup milk
- Combine cornmeal and boiling
water in a large microwave-safe bowl; stir well, cover and microwave
on HIGH for 2 minutes, remove and stir. Cook again on MEDIUM
for 2 minutes; stir again, then serve hot with brown sugar and
milk.
Makes 4 servings.
