Cozy Baked Eggs

4 slices Canadian bacon
2 large eggs
1 cup mayonnaise
1 tablespoon lemon juice
1 1/2 teaspoon parsley flakes
1 teaspoon grated onion
1/2 teaspoon Dijon mustard
1/4 teaspoon crushed tarragon leaves
2 tablespoons butter, softened
4 large eggs
2 English muffins
1/2 cup butter, melted
Paprika
  1. Preheat oven 375*F (190*C).
  2. Place one slice Canadian bacon in bottom of each of four individual greased baking dishes.
  3. Beat 2 eggs in a small saucepan. Stir in mayonnaise, lemon juice, parsley, onion, mustard and tarragon until well blended. Cook and stir over low heat 5 minutes or until thick (do not boil). Remove from heat and stir in butter until melted. Spread 1/3 cup in each baking dish.
  4. Break an egg into the center of each dish. Split muffins and spread with butter. Cut each half into two pieces and stand them at sides of each baking dish. Sprinkle eggs with paprika and bake 15 to 18 minutes or until eggs are set to desired doneness.

Makes 4 servings.
