Try this wonderful egg dish for your next brunch. It is sure to be a hit.

Double Stuffed Spinach and Bacon Eggs

1 (9-ounce) package STOUFFER'S® Creamed Spinach
12 large hard-cooked eggs
1/3 cup instant potato flakes
1/2 cup mayonnaise
1 tablespoon Dijon mustard
5 bacon slices, cooked and crumbled
3 green onions, minced
Paprika, (optional)
  1. Thaw creamed spinach in microwave at MEDIUM (50% power) 5 to 6 minutes.
  2. Peel eggs; cut in half lengthwise.
  3. Carefully remove yolks; mash yolks and potato flakes with a fork. Stir in creamed spinach, mayonnaise, and next 3 ingredients.
  4. Stuff egg whites generously with yolk mixture. Sprinkle with paprika, if desired. Chill, if desired
