Farmers are thought of
as having big appetites and simple tastes, so a hearty breakfast
of potatoes, ham, bacon and eggs, all cooked into one dish, seems
appropriate.
Farmer's
Breakfast
- 4 potatoes
4 strips of bacon
3 large eggs
3 tablespoons milk
1/2 teaspoon salt
1 cup diced ham
2 tomatoes, thinly sliced
1 tablespoon sliced green onion
- In a large pot over medium-high
heat bring plenty of cold salted water to a boil. Add potatoes
and boil for 30 minutes until tender but still firm. Remove from
heat. Rinse under cold water, and set aside to cool enough to
handle. Peel and slice; set aside.
- In a large skillet, cook
bacon over medium heat until transparent and limp. Add potato
slices and cook until lightly browned 5 to 10 minutes.
- Meanwhile, in a medium
bowl beat eggs with milk and salt. Stir in ham and tomato. Pour
over potatoes in skillet. Cook until eggs are set, about 8 minutes.
Garnish with green onions to serve.
Makes 4 servings.
