Kids will love these fun-to-eat French toast sticks.

French Toast Sticks

4 large eggs or 1 cup egg substitute
1/3 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
8 slices day-old bread
2 tablespoons butter or margarine, divided use
  1. Combine eggs or egg substitute, milk, vanilla and cinnamon in a shallow bowl or pie plate; set aside. Cut bread lengthwise into thirds; set aside.
  2. Heat a large nonstick griddle or skillet over medium-high heat. Melt 2 teaspoons butter. Dip bread sticks in egg mixture to coat; transfer to griddle. Cook sticks on each side until golden, adding remaining butter as needed. Dust lightly with powdered sugar and serve with pure maple syrup, if desired.

Makes 4 servings.
