Try this delicious puffed pancake with fruit for brunch!

German Puffed Pancake with Spiced Fruit Recipe

3 large eggs
1 cup milk
1 cup all-purpose flour
1/2 teaspoon salt
3 tablespoons butter, divided use
6 apples, sliced
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
  1. Preheat the oven to 475°F (245°C).
  2. Combine eggs, milk, flour, and salt in a medium bowl. Beat for 3 minutes with an electric mixer.
  3. In an oven-safe skillet, melt 2 tablespoons butter and add the batter. Bake about 15 minutes, then reduce the temperature to 350°F (175°C), and bake 10 minutes more, or until browned. Remove from the oven.
  4. Meanwhile, melt 1 tablespoon butter in a skillet over medium heat; add sliced apples, sugar, and cinnamon. Saute until the fruit is soft. Spread over the warm pancake.

Makes 4 servings.
