Griddle Cakes
- 1 cup milk
1 large egg
2 teaspoons salt
1/4 teaspoon granulated sugar
1 cup all-purpose flour
2 teaspoons baking powder
2 tablespoons butter
Maple syrup for accompaniment
- In a blender or food processor, combine milk, egg, salt and sugar. While processing, add flour and baking powder. Process for 10 seconds. Spread butter on a moderately hot griddle and pour the batter in 4-inch circles. When the bubbles pop, flip once. Serve with maple syrup.
Makes 10 griddle cakes.
