Overnight French Toast

4 large eggs
2/3 cup orange juice
1/3 cup milk
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
12 slices of day-old French bread
1/3 cup butter, melted
1 tablespoon finely grated orange peel
1/2 cup chopped pecans
  1. In a medium bowl, beat together eggs, orange juice, milk, sugar, vanilla and nutmeg. Place bread slices in a 13 x 9 x 2-inch pan, overlapping if necessary. Pour egg mixture evenly over the top, cover and refrigerate overnight.
  2. Preheat oven to 400°F (205°C).
  3. Brush a large baking sheet with melted butter, then arrange bread slices on top in a single layer. Sprinkle with pecans and orange zest. Bake until golden brown, about 20 to 25 minutes. Serve immediately.

Makes 6 servings.
