Protein Pancakes

1 1/2 cups whole wheat flour
1/2 cup bran
1/4 cup quick-cooking oats
1/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 cups milk
2 large eggs
3 tablespoons yogurt
2 tablespoons sesame oil
2 tablespoons vegetable oil
Honey for accompaniment
  1. Mix together whole wheat flour, bran, quick cooking oatmeal (uncooked and ground fine in a blender), flour, baking powder, and baking soda in a large mixing bowl; set aside.
  2. In another bowl, beat together milk, eggs, yogurt, and sesame oil. Add to flour mixture and stir to mix well.
  3. Heat a large skillet to medium heat; brush with vegetable oil. Pour batter onto skillet. Cook over medium heat about 2 minutes on each side or until the top bubbles; turn and cook briefly on the other side. Serve with honey.

Makes 20 pancakes.
