Root Vegetable Hash

Recipe Ingredients:

3 tablespoons olive oil
1 yam, peeled and 1/2-inch diced
1/2 sweet potato, peeled and 1/2-inch diced
2 parsnips, peeled and 1/2-inch diced
1 1/3 cups red onions, 1/2-inch diced
1 cup green bell peppers, 1/2-inch diced
1 cup olives, wedged
1 teaspoon salt
1 teaspoon thyme, chopped
Dash ground cinnamon
Dash cayenne pepper

Cooking Directions:

  1. Preheat oil in a large sauté pan over medium-high heat. Add yams, sweet potatoes and parsnips and cook, stirring occasionally, until lightly browned for 8 to 9 minutes.
  2. Add onions and peppers and continue cooking for 7 to 8 minutes until vegetables are completely tender.
  3. Turn heat to low and season with olives, salt, thyme, cinnamon and cayenne.
  4. Serve hot.

Makes 4 servings.
