
Sweet Apple Pancakes
Sautéed, cinnamon-flavored apples are cooked in the center of these tender pancakes.
Recipe Ingredients:
2/3 cup all-purpose flour
2 teaspoons granulated sugar
1/4 teaspoon salt
4 large eggs
1/2 cup milk
2 cups sliced apples
1/4 cup butter
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
Butter for accompaniment
Maple syrup for accompaniment
Cooking Directions:
- Sift together flour, 2 teaspoons sugar, and salt in a small bowl. Beat eggs and milk together in a medium bowl. Gradually add flour mixture to egg mixture and beat until smooth; set aside.
- Sauté apples in 1/4 cup butter until tender. Mix 2 tablespoons sugar and cinnamon together; stir into apples. Set aside.
- Melt 2 tablespoons butter in a small skillet. Pour in batter to a depth of about 1/4-inch. When set, place one-fourth of the apples on top then cover with more batter. Fry pancake until lightly browned on both sides. Repeat until all the batter and apples are used.
- Serve with butter and maple syrup.
Makes 4 servings.
