Whole Wheat Pancakes

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 large egg
1 tablespoon vegetable oil
2 tablespoons molasses
Butter for accompaniment
Maple syrup for accompaniment
  1. In a large bowl, combine flour, whole wheat flour, baking soda, and salt; mix well. In a smaller bowl, combine buttermilk, egg, oil, and molasses; mix well. Add the buttermilk mixture to the dry ingredients, stirring until just moistened (the batter will be slightly lumpy).
  2. Pour about 1/4 cup of the batter onto a greased griddle and cook until the bubbles on top just begin to break. Turn and cook briefly on the other side. Serve with butter and maple syrup.

Makes 4 servings.
