Cranberry Melt-In-Your-Mouth Cake
- 2 cups cranberries, rinsed, picked over, and patted dry
1 1/2 cups granulated sugar, divided use
1/2 cup chopped nuts
2 large eggs
1/2 cup butter, melted and cooled
1/2 cup margarine, melted and cooled
1 cup all-purpose flour
- Preheat oven to 325*F (160*C).
- Mix the cranberries, 1/2 cup of the sugar, and the nuts and pour into a greased 10-inch pie plate.
- Beat together the eggs and remaining 1 cup sugar. Add the flour, melted butter and margarine, stirring to blend well. Pour the batter over the cranberry mixture.
- Bake for 50 to 60 minutes. Serve plain or with vanilla ice cream.
Makes 6 to 8 servings.
