Honey Apple Cake 2
A deliciously moist, honey-sweetened apple cake topped with a honey lemon glaze.
Recipe Ingredients:
Cake:
3/4 cup honey
1/2 cup butter or margarine
1/2 cup dark brown sugar
1/2 cup strong coffee
2 large eggs
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 cups finely chopped apples
Honey-Lemon Glaze:
1/2 cup honey
2 teaspoons grated lemon peel
1/2 teaspoon ground cinnamon
Cooking Directions:
- For Cake: Preheat oven to 325°F (160°C). Grease an 8-inch fluted baking pan*; set aside.
- Combine honey, butter, sugar, coffee and eggs; beat thoroughly.
- Combine flour, baking soda, cinnamon, nutmeg, salt and ginger. Add to honey mixture; beat until thoroughly blended. Stir in apples. Pour into prepared baking pan.
- Bake for 50 to 60 minutes, or until wooden pick inserted near center comes out clean. Cool in pan 10 minutes. Invert on serving plate. Brush with warm Honey-Lemon Glaze.
- Honey-Lemon Glaze: In small saucepan combine honey, grated lemon peel and ground cinnamon; heat until consistency is thin enough to brush over warm cake.
Makes 10 to 12 servings.
*A greased 13x9x2-inch baking pan can be substituted.
