P-Nutty-Crispy White Chocolate

- 3 (6-ounce) packages white chocolate chips
2 cups crispy rice cereal
1 cup chopped roasted peanuts
1 cup sweetened flaked coconut
1 (6-ounce) package peanut butter flavored chips
1 teaspoon vanilla extract
- Line a 9-inch square pan with lightly
buttered waxed paper or aluminum foil. Set aside.
- Melt white chocolate in double boiler
over simmering water, stirring frequently. Remove from heat.
- Stir in cereal, peanuts and coconut. Gently
stir until peanut butter flavored chips until they are partially
melted.
- Turn mixture into prepared pan. Let cool
completely; cut into 1-inch squares. Store in tightly covered
container at room temperature.
Makes about 3 dozen candies.
