Chocolate chips, marshmallow and pecans makes this a rocky-road type fudge.

Quick Pecan Fudge

1 1/2 cups granulated sugar
2/3 cup evaporated milk
2 tablespoons butter
1/4 teaspoon salt
1 1/2 cups semisweet chocolate chips
4 ounces miniature marshmallows
1 teaspoon vanilla extract
3/4 cup chopped pecans
  1. Line an 8 x 8 x 2-inch pan with aluminum foil; set aside.
  2. Combine sugar, evaporated milk, butter and salt in a heavy-medium saucepan over medium heat. Bring to a boil; stirring constantly. Boil 4 to 5 minutes. Remove from heat; stir in semi-sweet chocolate chips, miniature marshmallows and vanilla. Stir vigorously until the marshmallows are melted, about 1 minute.
  3. Pour into prepared pan. Sprinkle with chopped pecans, pressing in lightly. Refrigerate until firm. Cut into 16 pieces.

Makes 16 pieces.
