Easy Chicken Fried Rice
Put supper on the table fast with this easy recipe that turns a convenient package of rice and vermicelli mix into a meal with the simple addition of chicken, mushrooms, pea pods and bean sprouts.
Recipe Ingredients:
2 tablespoons butter or margarine
1 (6.2-ounce) package rice and vermicelli rice mix, any flavor
1 3/4 cups hot water
1 tablespoon soy sauce
1 cup sliced fresh mushrooms
14 ounces boneless skinless chicken breast strips
1 1/2 cups fresh pea pods, tips and strings removed, halved
1 cup fresh bean sprouts
Cooking Directions:
- Melt butter in 10-inch skillet until sizzling; add rice and vermicelli mix. Cook over medium-high heat, stirring occasionally, until lightly browned (3 to 4 minutes). Add rice seasoning mix, hot water, soy sauce, mushrooms and chicken strips. Continue cooking until mixture comes to a boil (3 to 4 minutes).
- Reduce heat to low. Cover; cook 10 minutes. Add pea pods and bean sprouts. Cover; continue cooking until rice is tender and liquid is absorbed (3 to 5 minutes). Fluff with fork.
Makes 4 servings.
