Banana Date Oat Cookies

3 large bananas, mashed
1 cup chopped dates
2 cups rolled oats
1/3 cup canola oil
1 teaspoon vanilla extract
  1. Preheat oven to 350*F (175*C).
  2. In a large bowl, combine the bananas, oats, dates, oil and vanilla. Mix well and allow to sit for 15 minutes.
  3. Drop by teaspoonfuls onto a non-stick cookie sheet. Bake for 20 minutes or until browned. Cool on wire rack. Store in air-tight container.

Makes 3 dozen.
