Banana-Oat Drop Cookies

1 cup rolled oats
3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 medium bananas, mashed
1/4 cup granulated sugar
2 teaspoons vanilla extract
2 teaspoons banana extract
  1. Preheat oven to 375°F.
  2. In a medium mixing bowl, combine oats, flour, baking powder and baking soda. Mix well. Add bananas, sugar, vanilla and banana extract; stir until blended.
  3. Drop batter by rounded teaspoonfuls onto a nonstick baking sheet. Bake 8 to 10 minutes, until bottoms of cookies are lightly browned. Remove cookies to a wire rack to cool.

Makes 16 cookies.
