Big Batch Chocolate-y Oatmeal Cookies

2 cups butter, softened
2 cups granulated sugar
2 cups firmly packed brown sugar
4 large eggs
2 teaspoons vanilla extract
5 cups quick-cooking oatmeal
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 (12-ounce) packages or 4 cups semisweet chocolate chips
1 (7-ounce) milk chocolate candy bar, coarsely grated
2 cups chopped nuts
  1. Preheat oven to 375°F.
  2. Beat butter, sugar and brown sugar in a large mixing bowl until light and fluffy. Add eggs and vanilla and beat until smooth. Sift oatmeal, flour, baking powder, baking soda and salt in a small bowl. Add to creamed mixture and mix until well combined. Stir in chocolate chips, grated chocolate and nuts. Drop by the tablespoon onto baking sheets 2 inches apart. Bake for 8 to 10 minutes until golden brown around edges. Cool on a wire rack.

Makes 36 cookies.
