Cake-Mix Quick Cookies
"Homemade" cookies have never been easier! With a little adult supervision, even the youngest chefs can whip up a batch of yummy hot-out-of-the-oven cookies with this simple recipe. Just think of the possibilities with so many cake mix flavors available!
Recipe Ingredients:
1 (18.25-ounce) package any flavor cake mix
2 large eggs
1/2 cup vegetable oil
Optional Add-Ins: Add 1/2 to 1 cup chocolate chips, nuts, raisins, dried cherries or cranberries, lemon or orange zest, etc.
Cooking Directions:
- Preheat oven to 350°F (175°C).
- In a large bowl, stir the cake mix with a whisk (or fork) to break up any lumps; add the eggs and oil and stir until well mixed. If desired, add your choice of optional add-ins.
- Drop by rounded tablespoonfuls onto an ungreased cookie sheet and press each to flatten slightly.
- Bake for 12 minutes, turning the cookie sheet around halfway through baking to ensure even browning. Transfer cookies to wire rack to cool.
Makes 30 cookies.
