Carrot Oatmeal Cookies
- 1/2 cup vegetable shortening
1 cup grated carrot
1 cup honey
2 large eggs, beaten
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups quick cooking oats
1/2 cup raisins
1 cup nuts, chopped
- Preheat oven to 350°F. Grease a baking sheet; set aside.
- In a large bowl cream together shortening and carrots. Stir in honey and eggs. Gradually stir in flour, baking powder, baking soda, salt, cinnamon, nutmeg, raisins, oats and nuts.
- Drop by teaspoonfuls 2 inches apart onto baking sheet. Bake for about 12 minutes or until lightly browned.
Makes 36 cookies.
