Chopped honey roasted peanuts offer a crunch
of flavor in these cookies.

Peanut Cookies
- 4 (1-ounce) squares semisweet
baking chocolate
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or margarine
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
2 teaspoons vanilla extract
1 large egg
1 1/2 cups coarsely chopped honey-roasted peanuts
- Preheat oven to 375°
F.
- Combine flour, baking
soda and salt in small bowl. Beat butter, brown sugar, granulated
sugar and vanilla extract in large mixer bowl until creamy. Beat
in egg and melted chocolate. Beat in flour mixture. Stir in nuts.
Drop by rounded tablespoon onto ungreased baking sheets.
- Bake for 8 to 9 minutes
or until edges are set but centers are still slightly soft. Cool
on baking sheets for 3 minutes; remove to wire racks to cool
completely.
Makes 30 cookies.
