Potato Chip Cookies
It may seem incredulous that potato chips could actually make a good cookie—but they do. Give these cookies a try, you won't be disappointed.
Recipe Ingredients:
1 cup vegetable shortening
1 cup granulated sugar
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup crushed potato chips
Cooking Directions:
- Preheat oven to 350°F (175°C).
- Cream shortening, sugar and brown sugar together until light and fluffy. Add eggs and vanilla, mixing well. Stir in flour, then fold in potato chips.
- Drop by tablespoonfuls about 2-inches apart onto a lightly greased or nonstick baking sheet. Make a criss-cross pattern with the tines of a fork on top of each cookie.
- Bake for about 12 minutes or until light golden brown. Transfer cookies to wire rack and cool completely. Store in airtight container.
Makes 5 dozen cookies.
