"My sis in Ohio sent me this recipe. Before you ask - there is no flour in this recipe. They're so rich - one or two cookies will cure your sweet and chocolate fix for the day. Enjoy!" - Submitted by Pat of Florida, USA.

Quick and Easy Peanut Butter Cookies

1 cup peanut butter (smooth or crunchy)
3/4 cup packed brown sugar (dark or light)
1 teaspoon. baking soda
1 large egg
1 cup semisweet chocolate chips
  1. Mix together the first 4 ingredients, then add the chocolate chips. Place slightly rounded teaspoonfuls 2-inches apart on an ungreased cookie sheet (I used parchment paper on mine).
  2. Bake at 350*F for about 9 minutes - they will be puffy and soft to the touch. Only bake one sheet at a time. Cool on sheet for 5 minutes, then remove to wire rack to cool completely.

Makes about 2 dozen cookies.
