Quick and Easy Peanut Butter Cookies
"My sis in Ohio sent me this recipe. Before you ask - there is no flour in this recipe. They're so rich - one or two cookies will cure your sweet and chocolate fix for the day. Enjoy!" Recipe submitted by Pat of Florida, USA.
Recipe Ingredients:
1 cup peanut butter (smooth or crunchy; do not use natural-style)
3/4 cup brown sugar (dark or light), firmly packed
1 teaspoon baking soda
1 large egg
1 cup semisweet chocolate chips
Cooking Directions:
- Mix together the first 4 ingredients, then add the chocolate chips.
- Place slightly rounded teaspoonfuls 2-inches apart on an ungreased cookie sheet (I used parchment paper on mine).
- Bake in a preheated oven at 350°F (175°C) for about 9 minutes - they will be puffy and soft to the touch. Only bake one sheet at a time. Cool on sheet for 5 minutes, then remove to wire rack to cool completely.
Makes 2 dozen cookies.
