Simple and Easy Peanut Butter Cookies

3/4 cup Crisco brand shortening
3/4 cup peanut butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
Pecan halves
  1. Cream shortening, peanut butter and sugars in a large mixing bowl. Add egg and vanilla; mixing well. Stir in flour and baking soda until just mixed.
  2. Roll out into small balls and press with a fork and place a pecan in the center.
  3. Bake at 350*F (175*C) until they are lightly brown. DO NOT OVER BAKE, allow cookies to remain on cookie sheet to continue baking before removing to cool.

Makes about 2 1/2 dozen cookies.
