This low-fat, no-bake cheesecake is loaded with berries. Take a few moments to whip up this creamy dessert tonight.
Berry Tofu Cheesecake
- 2 cups lemon/lime soda, divided use
3 packets unflavored gelatin
1 cup raspberries or blueberries, rinsed
4 ounces tofu, drained
2 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon fresh lemon juice
1 graham cracker pie crust
- Combine half the soda with gelatin in a bowl; stir and set aside. Heat remaining soda then pour over gelatin and stir until dissolved.
- Pour mixture into a blender; add raspberries, tofu, honey, vanilla and lemon juice. Process until smooth and creamy.
- Pour into pie crust and refrigerate until firm. Garnish with additional berries, if desired, just before serving.
Makes 8 servings.
