Cookies and Cream Cheesecake
An easy, no-bake cheesecake with a center layer of crumbled cream-filled chocolate cookies—and cookie crumb crust.
Recipe Ingredients:
2 cups chocolate cream-filled sandwich cookies, finely chopped
6 tablespoons butter or margarine, softened
1 package unflavored gelatin
1/4 cup cold water
1 (8-ounce) package cream cheese
1/2 cup granulated sugar
3/4 cup milk
1 cup whipping cream, whipped
1 1/4 cups chocolate cream-filled sandwich cookies, coarsely chopped
Cooking Directions:
- Combine finely chopped cream sandwich cookies and softened butter; press onto the bottom of a 9-inch springform pan.
- Soften unflavored gelatin in cold water and stir over low heat until dissolved. Combine cream cheese and sugar, mixing at medium speed with an electric mixer until well blended Gradually add the gelatin mixture and milk, mixing until well blended. Chill until the mixture is thickened but not set. Fold in cream whipped to soft peaks.
- Reserve 1 1/2 cups of the cream cheese mixture and pour the remaining cream cheese mixture over the crust. Top with coarsely chopped cream sandwich cookies and the reserved cream cheese mixture. Chill until firm.
Makes 12 servings.
