Frosty Fruit Pizza

1 1/2 cups cake flour
6 tablespoons low-fat margarine
1 large egg
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cream of tarter
1 cup granulated sugar
 
1 (8-ounce) package nonfat cream cheese, softened
2 teaspoons pineapple juice
1 cup (14 large) strawberries
34 pineapple pieces
53 blueberries
1 kiwi
14 mandarin orange pieces
  1. Mix together flour, 1/2 cup sugar, margarine, egg, baking soda and salt. Press into a 12-inch round, greased pizza pan. Bake 10 minutes at 350*F. Cool in the refrigerator.
  2. Mix cream cheese, remaining sugar and pineapple juice. Spread over cooled crust.
  3. Slice strawberries, kiwi and pineapple (or other fruit of your choosing) into thick slices. Arrange sliced fruit and blueberries over the crust and filling. Cool thoroughly and cut into eight wedges for serving.
