Holiday Eggnog Cheesecake

1 cup graham cracker crumbs
1/4 cup granulated sugar
1/4 teaspoon ground nutmeg
1/4 cup butter or margarine, melted
1 envelope unflavored gelatin
1/4 cup cold water
1
(8-ounce) package cream cheese
1/4 cup granulated sugar
1 cup commercially prepared eggnog
1 cup whipping cream, whipped
  1. Combine graham cracker crumbs, 1/4 cup sugar, nutmeg, and melted butter; press onto the bottom of a 9-inch springform pan.
  2. Soften unflavored gelatin in cold water; stir over low heat until dissolved.
  3. In another bowl, combine cream cheese and remaining sugar; beat at medium speed with an electric mixer until well blended. Gradually add the gelatin mixture and eggnog; mixing until blended.
  4. Chill until slightly thickened. Whip cream to soft peaks and fold into the thickened mixture. Pour over the crust and chill until firm.

Makes 12 servings.
