Individual custard tarts served with fresh fruit are the essence of simplicity after a rich meal. Light and delicate yet flavorful these tarts make a lovely presentation dressed with fresh mint leaves.

Individual Custard Tarts

6 prepared single-serving graham cracker crusts
1 (3 25-ounce) package vanilla pudding and pie filling mix, (not instant)
1/3 cup water
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated Lowfat Milk
1 tablespoon lemon juice
2 teaspoons grated lemon peel
1 pint strawberries*, sliced (fruit is optional)
1/4 cup mint leaves, (optional)
  1. Combine pudding mix and water in small saucepan. Add evaporated milk, lemon juice and lemon peel; stir until smooth. Cook over medium-low heat, stirring constantly, until mixture comes to a boil and thickens.
  2. Pour into crusts; refrigerate for 1 hour or until set. Top with fruit and mint leaves before serving.

Makes 8 servings.

*About 3 peeled, sliced kiwifruit or 2 oranges (sectioned) could be used in place of the strawberries or one could dress the tarts with any desired combination of these fruits.
