"I'm not going to say it's low in fat (and you won't burn off any calories making it because it is so simple), but boy, is this a great dessert! Everyone needs to enjoy themselves sometimes! Don't forget to experiment. You can substitute almost any fruit you like." - Recipe submitted by Dotty B.

Strawberry Mousse

1/2 cup honey
2 cups sliced strawberries
2 cups ricotta cheese
1/2 teaspoon vanilla extract
1/2 cup whipping or heavy cream
Sweetened whipped cream (optional)
Sliced strawberries (optional)
  1. Place all of the ingredients in a blender and blend until smooth. Taste and adjust the flavor as you like.
  2. Pour the mixture into stemmed glasses and chill before serving.
  3. Serve garnished with a dollop of sweetened whipped cream and sliced strawberries, if desired.
